Fresh Fruit & Ricotta Parfaits

These parfaits are so pretty! For a festive breakfast, try adding a sprinkling of granola.

Serves 6 | Serving size 1 parfait | Exchanges 1 1/2 Carbohydrate, 1/2 Fat

1 1/2 cups reduced-fat ricotta cheese

2 tablespoons honey

2 teaspoons vanilla extract

4 cups fresh berries, such as a mixture of blueberries and raspberries

Fresh mint leaves (for garnish)

1. Mix cheese, honey, and vanilla.

2. Wash and dry berries.

3. Layer ricotta and berries in pretty serving dishes, such as stemmed wine glasses or a trifle dish. Garnish with fresh mint.
